PICI is a thick hand-rolled spaghetti-like pasta that originates in the little hilltop town of Celle Sul Rigo, Tuscany. They celebrate their pici every year on the last Sunday of May, with a sagra known as ‘sagra dei pici’.
The dough is typically made from flour and water. It is then rolled out in long strips that are not uniform.
