Malfadine or Reginette

MALFADINE or REGINETTE, comes from Naples where it is also called ‘fettuccelle ricce’. It is about 1/2 inch wide with ruffled edges on both sides.

The name ‘reginette’ meaning ‘little queens’ refers to Princess Mafalda of Savoy, in whose honor this pasta type was created.

Malfadine can be baked, like lasagna, or served with chunky and robust sauces of all types. The ruffles help to hold sauces really well.
