Maccheroni alla Molinara

MACCHERONI ALLA MOLINARA is a handmade pasta that originated in the 14th century, in the region of Abruzzo. It is a long, thick and irregular shaped pasta about 1/4 inch thick. It is a very simple dough using egg, water and soft wheat flour (Tipo 00).

Once the dough is made, it is rolled and stretched into very long flat strips. These strips can as long as 3 or 4 feet, so they are a lot of fun to make and cook.

Maccheroni alla Molinara is best served with very savory tomato based meat or vegetable sauces.
