LASAGNETTE are small pieces of lasagna-like pasta. They have ruffled or serrated edges and are often referred to as lasagnette ricce (meaning ‘curled’). Longer or wider versions of this lasagnette are called LASAGNOTTE.
These little pasta shapes have their origins in Liguria where they are often served with a simple pesto.
