FUSILLI originated in southern Italy in the regions of Molise and Basilicata. Fusilli means ‘little spindles’. Although commonly extruded through bronze dies, when made by hand a special, thin utensil like a knitting needle is used. A strip of pasta is coiled around the tool, slid off and left to dry.
