Chitarra

CHITARRA pasta is a long square shaped pasta commonly made using egg pasta. It is typically found in the Abruzzo region of Italy. There is a similar pasta known as Tonnarelli, which is found in the Lazio region.

In the Abruzzo region, chitarra is served with mutton ragù or tomato sauce and fresh sheep’s milk ricotta. Chitarra works well with rich, robust and chunky sauces.
