CASARECCE or STROZZAPRETI originated from Sicily in southern Italy. It is a very popular pasta and the word ‘casarecce’ means ‘made at home’.
It is traditionally made with durum wheat semolina flour. This helps the pasta keep its shape.
Casarecce hold a sauce very well and works perfectly with all sorts of robust, chunky and aromatic sauces. It is usually served with meat or vegetable based sauces.
