Caramelle

Caramelle translates to “candies” in Italian. This playful pasta preparation is a stuffed pasta (like ravioli) that is shaped to resemble a wrapped candy. Caramelle are thought to have originated in the Emilia Romagna region.

Traditionally they are filled with a cheese based filling referred to as ‘ravioli di magro’, meaning without meat. This is related to Lent, so although they are meatless fillings, it can include fish. Fillings will include ricotta and spinach, butternut squash and other seasonal vegetables or fish.

Caramelle take on many candy shapes and sizes, and made with a variety of colored pasta. A perfect little pasta shape to awaken your creative side. Then serve with a tomato or light herb sauce.
