How to make egg pasta using Tipo 'oo' flour
- You will need 1/2 cup of Tipo '00' to 1 medium sized egg - per person
- Add the flour to a mixing bowl.
- Make a cavity in the center of the flour and add the egg.
- Using a fork, gradually bring the flour into the egg until you begin to form a dough.
- When the dough becomes unmanageable with a fork, use your hands to form a soft, velvety dough.
- Cover the dough and leave it to rest for up to 30 minutes before forming.
