We specialize in the more unusual pasta or those that are difficult to find which is exactly why we love Ingannapreti.

Our egg pasta ingannapreti are made completely from scratch using only semolina durum wheat flour and pasteurized eggs. We created a number of different colors using carbonized vegetable powder (black), along with organic spinach and kale grown at Rockledge Gardens.

Once the dough is ready, it is carefully combined to created stripes, marbling and other random variances of color and rolled to the exact thickness for creating these wonderfully large tortelloni-shaped pieces of pasta. Each ingannapreti is made carefully and by hand before being set aside to dry naturally.

All of our pasta dough is handmade in small batches and every step of production is overseen by The Pasta Maker to ensure the very best quality every time.

Italians will tell you that if you are going to all the trouble of making fresh pasta, then make egg pasta. Everyday dried pasta will swim in any sauce you put in it. This is because it is baked very slowly during the drying process which creates a smooth and almost shiny surface. All of our fresh pasta is allowed to dry naturally prior to packing.

The strange name 'ingannapreti' meaning 'deceive the priest', derives from the shape of the pasta that resembles that of tortellini. However these pasta shapes are not stuffed but are instead, small folded pasta. The story goes that many years ago, women from the Italian region of Emilia Romagna, were such good housewives and made excellent tortellini.  It was customary for priests to visit homes in the parish and that they would often arrive just in time for lunch. Of course, families were obliged to invite the priest in to share their meal. However, many of these household were poor and saw the priests as being very greedy and so the plot of the ingannapreti was born. The priest were served a bowl of what looked to be tortellini and were instead deceived.

Ingannapreti are traditionally served as Italians serve their tortellini, in a dish of aromatic broth with meat, fish or vegetables. Although they are just as happy to be covered in your favorite sauce or sitting in your favorite salad, so let your imagination go wild.
