Our gluten free potato gnocchi is made completely from scratch and by hand and although we make a lot of them, we hope never to have to mechanize the process. There is something more Italian about creating gnocchi by hand and with your help and lots of feedback, we have developed this gluten free version.
Gnocchi originates in the chilly climate of Northern Italy, and were the perfect peasant food being both filling and inexpensive to make at home.
We make our gluten free potato gnocchi flavors from the farm in the same way as we do our traditional gnocchi using potato, locally grown organic butternut squash, sage, spinach and beetroot and add our own blend of gluten free flour: tapioca, brown and white rice flour. First of all we steam all of the vegetables in the oven to help trap all the flavor. For us it is much more convenient and the potatoes still come out as dry as they need to be.
Each little gnocchi is rolled over the gnocchi board and once formed, the gnocchi they are frozen because we don't add any preservative. This means that they are best cooked from frozen and will still only take a few minutes.
Traditionally, gnocchi are served with pesto style sauces but they are a great deal more versatile than that. Whether you like a rich and robust ragú, creamy sauce or simply olive oil and Parmesan cheese, your gnocchi dish won't disappoint. You can even bake and fry them - yes, we have done it!
