Macaroni is one of the most popular pastas and is a particular favorite of children. Therefore, dishes such as Macaroni Cheese have become a firm family favorite all over the world and especially in North America and Britain, where the dish originated. For our macaroni, we choose to make it with pasteurized egg which gives the pasta a fuller, richer texture and flavor (we can also make it without egg for those following a vegan diet).
Over the years the Pasta Maker has developed our own recipe for making pasta that is a close to real Italian pasta as possible. We use only semolina durum and once the dough is ready, it is extruded through a bronze die which gives each little piece of macaroni a lightly rough surface, akin to a fine sandpaper. This ensures that the maximum amount of sauce clings to the pasta for an enhanced pasta eating experience.
