Bruschetta has been our go-to sampling dish in ‘Little Italy’ at Rockledge Gardens, for a few months now. We often use a crusty French bread, sliced and lightly toasted in a skillet, over which we drizzle some of our infused olive oil.
We work with the Ancient Olive to bring you the best selection and have found that for a simple bruschetta, Garlic, Basil, Pesto or Tuscan Herb infused olive oils have turned out to be your favourites.
A simple bruschetta is best served warm to the table where either you or your guests can drizzle their own personal favourite infused oil. These brushcettas are perfect served with soups or as part of an antipasto.
Of course, you should be prepared for your humble offering not leaving the kitchen. Our experience is that people gathering there will help themselves the second the bruschetta is out of the pan. Just keep those things coming!
